Watermelon Salad with Orange, Radish and Red Onion

Give your summer salads a fresh, colorful spin with this quick and easy salad recipe. A few steps and a handful of creative ingredients will wow party guests or add a burst of flavor to any weekday lunch—preferably one eaten al fresco. Switch things up, and trade in your standard bowl of lettuce and salad dressing for a unique paring of watermelon, orange segments, onion and radish. This quick recipe leaves more time for summertime lounging, swimming and napping.

I’ve mentioned this so many times but in the summer I just want to make recipes that are completed in under 20 minutes – start to finish. With gorgeous weather and fun outdoor activities happening, who wants to be stuck indoors? Not me! I also look for recipes that will be served room temperature or cold to make things even easier. Hey – summer is for relaxing!

Ingredients:

1/4 of a small (6-pound) seedless watermelon, rind removed, cut into cubes

1 large orange, peel and pith removed, flesh cut into segments

1/4 small red onion, thinly sliced 

2 ounces feta cheese, thinly sliced

1/2 cup thinly sliced radishes

1/4 cup fresh parsley leaves

4 teaspoons extra-virgin olive oil

Coarse salt and ground pepper

Directions:

  1. In a serving bowl, arrange watermelon, orange, radish, red onion, feta cheese, and parsley. Drizzle with olive oil and season with salt and pepper.
