Pulled Pork Slider Sandwiches

I don’t know about you all but I am READY to kick off summer. Maybe I am a little early, but I am ready to be in that relaxed summer state of mind. Many of my favorite summer traditions revolve around parties and making classic, outdoor friendly dishes from May all the way to September. Think slider style sandwiches, cold salads, frozen desserts and gooey cobbler. These Pulled Pork Slider Sandwiches are a summertime classic and pair wonderfully with creamy coleslaw and a tall, icy glass of lemonade.

Pulled pork sandwiches are affordable and delicious, which makes it an ideal ingredient for everything from weeknight dinners to summer gatherings.  Since your pork must be tender, this crock pot recipe cooks the meat low-and-slow without a smoker. With only ten minutes of hands-on time, this process is perfect for a fuss-free meal. Simply throw a boneless pork shoulder roast and some sweet onions with a bit of Southern seasoning in a slow-cooker, and come home to a ready-to-eat-meal. Meet your new weeknight and weekend favorite recipe.

Ingredients:

2 large sweet onions, cut into 1/2-inch slices

1 (5 to 6 lb.) boneless pork shoulder roast

2 tablespoons seasoning blend, such as WayneO’s Southern Seasoning

1 teaspoon salt

1 can (10.5-oz.) condensed chicken broth

Hamburger or brioche buns, for serving

Directions:

  1. Place onions in a lightly greased 6-qt. slow cooker. Rub roast with seasoning blend and salt; place roast on onions. Pour broth over roast. Cover and cook on LOW 8 to 10 hours or until meat shreds easily with a fork.
  2. Transfer roast to a cutting board or serving platter; shred with 2 forks, removing any large pieces of fat. Remove onions with a slotted spoon.
  3. Serve pork on a small hamburger bun or eat by itself. I top my sandwiches with coleslaw, BBQ sauce and sweet pickles.
