Strawberry and Vanilla Yogurt Popsicles

It goes without saying that there is nothing better than cooling off after a long day at the beach or pool with a popsicle. The only problem with traditional summer treats is that they tend to be a little too heavy on sugar and calories, while not fully utilizing the freshness of seasonal ingredients. When you decide to use what nature has to offer, you will find that there is less need for added sugars and artificial flavors. One of my favorite frozen treats this summer are these Strawberry and Yogurt popsicles. Cool off from the heat with these refreshing and delicious two-ingredient popsicles that are so easy, you’ll be making them all summer long.

The best part about this recipe is that they’re healthy enough to have for breakfast! “Ice cream” for breakfast? I think yes! This is a great way to trick your kiddos into eating something healthy, and I know that can be difficult. The best part about these popsicles is that you can use whatever fruit you want. Love raspberries but not a fan of strawberries? No problem! Just substitute out the fruit. These have been one of my go-to recipes, all summer long.

Ingredients

cups sliced strawberries (10 ounces)

1 1/2 cups vanilla nonfat yogurt

If you want to make the popsciles sweeter, 3 tablespoons agave nectar, honey or other sweetener

Instructions

  1. Place strawberries and if you want the popsicles sweeter add 2 tablespoons agave nectar in a food processor. Puree until smooth, with some small chunks of fruit.
  2. Spoon a couple spoonfuls of the strawberry puree into bottom of each popsicle mold. Spoon yogurt on top.
  3. Place popsicle sticks into popsicles. Cover and freeze until solid, about 2-3 hours.
