Roasted Heirloom Tomato Crostini

You say tomato… I say, let’s cook with them! Heirloom tomato season is here, and a rainbow of plump, juicy heirloom tomatoes are popping up in stores. There is nothing I love more than crusty bread, topped with soft mozzarella cheese and heirloom cherry tomatoes. This crostini makes a wonderful appetizer, lunch, or dinner (when you don’t feel like spending hours in the kitchen!) It’s one of the simplest dishes you’ll make this summer, and arguably the most delicious.

The best part about cooking with high quality ingredients, is that you don’t need many. The flavors are so pronounced that a few simple ingredients really go a long way. I’ve always believed that recipes don’t have to be complicated and have one hundred different ingredients to be delicious. In fact, my favorite recipes always have very simple ingredients and steps. Celebrate summer’s bounty with this tasty crostini.

Ingredients

10 ounces multicolored cherry tomatoes

2 garlic cloves, thickly sliced

5 tablespoons extra-virgin olive oil, plus more for drizzling

Kosher salt

Pepper

Fresh basil

1 pound fresh mozzarella cheese, sliced thin

8 slices of french bread, cut 1/4-inch thick and toasted

Flaky sea salt, for serving

Instructions

  1. Preheat the oven to 325 degrees F. In a bowl, toss the tomatoes with the garlic and 1 tablespoon of the olive oil; season with kosher salt and pepper. Transfer the tomatoes to one side of a parchment-lined baking sheet. Bake for about 30 minutes, until bursting and lightly caramelized. Transfer the tomatoes to a bowl.
  2. Top the mozzarella  on the toasts and top with the tomatoes. Drizzle with olive oil, sprinkle with sea salt and pepper and top the toasts with the basil leaves. Serve immediately.
