With the holidays just around the corner, this cranberry apple bread, filled with cranberries, apples and walnuts, will soon become a family favorite. Perfect for Thanksgiving or Christmas morning, this bread is easy to put together, and the batter can be prepared the night before and then baked the morning of. It also can make a wonderful last minute gift; just bake in a disposable pan and then wrap with decorative tissue paper.
1 3/4 cups peeled, cored and chopped apple
3/4 cup white sugar
3 tablespoons vegetable oil
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon ground cinnamon
2 1/4 cup fresh or frozen cranberries
1/2 cup chopped walnuts
- Preheat oven to 350 degrees F. Lightly grease a 9×5 inch baking pan.
- Stir together apples, sugar and oil. Add egg; mix well. In a separate bowl, sift together flour, baking powder, baking soda and cinnamon. Stir flour mixture into wet ingredients, mixing just until dry ingredients are moist. Stir in cranberries and walnuts. Spread batter into prepared pan.
- Bake in preheated oven for 35 to 45 minutes, until toothpick inserted into center of loaf comes out clean.
