Kale and Romaine Caesar Salad with Herbed Portuguese Bread Croutons

It’s a “superfood,” the new “hot” food item, and (dare I say it) has more of a following than the cupcake trend? It’s on almost every restaurant menu from Manhattan to Honolulu and is taking the food world by storm. It’s called Kale!

I have said this time and time again, but simple and fresh ingredients almost always make the most delicious dishes. This Kale and Romaine Caesar Salad with Herbed Portuguese Bread Croutons is picture-perfect, and gives complete credence to that statement.

A traditional salad, with an extra burst of flavor and a bit of a twist, comes together attractively for a side dish or light meal. The bakeries in Nantucket carry Portuguese bread, which is delicious in every method it is used. I had some bread left over (crazy I know because it is so tasty) so I sliced it into squares, added fresh herbs and some olive oil and made flavorful croutons that have so much more of an enhanced flavor than the store bought kind. Crisp kale and romaine are topped with a creamy Caesar dressing and these tasty croutons for a delicious creation. This is a marvelous end of summer dish that can be assembled in less than 20 minutes, which I love! The produce popping up in markets lately has been fabulous, so be sure to take full advantage and join the Kale Movement!
