Grilled Corn with Herb Butter is juicy, tender and the perfect side to serve with those BBQ ribs. It’s straight from the heart and fresh off the grill. Not to mention, it’s one of my dads favorites!
In my opinion, the best way to cook corn is to grill it. Its crunchy, and has the perfect flavor that just tastes like summer. This well-seasoned butter will douse each ear of corn with flavor as it melts, making the corn that much better. It’s grilling season! So next time you’re at the store or farmers market remember to grab some corn, fresh herbs and don’t forget the butter. This will be a staple, all summer long.
Ingredients:
1/2 cup butter, room temperature
2 tablespoons finely chopped fresh tender herbs
1 1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
8 ears corn, shucked
1 tablespoon vegetable oil
Directions:
1. Prepare grill for medium-high heat. Mix butter, herbs, salt, pepper, in a small bowl. Set herb butter aside. Brush corn with oil and grill, turning often, until it is tender and charred in spots, 5-8 minutes.
2. Once cooked, place corn on a large platter and spread with reserved herb butter.
