Apple Saucers

School is officially out for the summer, and that means the kiddos are home and probably asking for snacks. Who says getting healthy is only for adults? With kids, snacks need to be quick and easy, and most importantly, appeal to even the pickiest of eaters. Looking for a fun, healthy snack to pack in a lunch box before the kids dart out the door to camp? One of my favorite snacks is what I like to call Apple Saucers. They’re an out of this world treat your kid will love!

Simply take thin slices of apple and top with your favorite toppings. I spread a thin layer of peanut butter so my toppings had something to stick too, and topped them off with granola, pecans and chocolate chips. I love the taste of the creamy peanut butter, crunchy granola and pecans, sweet chocolate, and the freshness of the apple. The best part about this snack is these are all common ingredients we have laying around the kitchen all the time. I know I do! It’s a vitamin and fiber rich kid friendly snack, that’s full of flavor and sure to please.
