Citrus Roasted Shrimp

We’ve been enjoying the summer season for more than a few weeks already, and I love these all of these light and refreshing dishes. Shrimp are one of my go to proteins in the summer, because they’re quick and make a great light meal. This recipe for Citrus Roasted Shrimp is a summer staple in my house, and the tang of citrus gives wonderful flavor to these delicious shrimp. Add these to a salad, as an appetizer or serve with dinner, either way they’re OMG yum! Not to mention, they’ll be a serious hit.

Coat the shrimp with a very light drizzle of olive oil, fresh orange and lemon juice, a little zest from the fruits and thats it! It really is that easy, and you won’t believe how fresh and delicious this is!

Ingredients:

2 pounds (12 to 15-count) shrimp

1 tablespoon good olive oil

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 orange

1 lemon

 

Directions: 

1. Preheat the oven to 400 degrees F.

2. Peel and devein the shrimp, leaving the tails on. Place them on a sheet pan with the olive oil, salt, and pepper and spread them in 1 layer. Squeeze the juice of half an orange and half a lemon on to shrimp.

3. Roast for 8 to10 minutes, just until pink and firm and cooked through. Sprinkle with desired amount of orange and lemon zest.
