The recipe for “Boyfriend Chicken” has been floating around the Internet for years but let’s face it, for novice cooks it’s a complicated recipe. One of my friends since I was a little kid calls me in a panic the other night because this guy she’s trying to impress suggests she makes dinner. Now, my friend has a lot of talents but let’s just say cooking isn’t one of them. Going through my recipe book that I keep in my head I knew she needed something foolproof. I suggested Pesto Pizza with Spicy Chicken Sausage. It’s quick and easy so it’s difficult to screw up — which is obviously key when you’re cooking to impress a guy. Maybe this will be the next Boyfriend Pizza, who knows… but for all of my ladies out there that say they can’t cook, this ones for you!
The best part about this recipe is everything is store bought. Yep, you heard me correctly. Your local market should have all of the ingredients and all you have to do is assemble. Store bought pizza dough, pesto, chicken sausage, tomatoes and mozzarella cheese is all you need. Like I said, it’s a foolproof recipe and boyfriend approved.
Ingredients:
1 package of pre-made pizza dough
1 container of basil pesto
3 small tomatoes, sliced
2 chicken sausage links (I used sweet Italian)
1 package shredded mozzarella cheese
Directions:
1. Pre-heat oven according to pizza dough directions.
2. Slice chicken sausage into slices at a diagonal. Cook in a saute pan until golden brown and cooked through. Set aside.
3. Spread pizza dough onto a greased pan and top with pesto. Sprinkle with cheese and add sausage and fresh tomato slices.
4. Cook according to pizza dough directions. It will be around 12 minutes, or until dough is cooked through and cheese is melted.
