I’ve always been a firm believer that tacos belong on the menu for lunch, dinner and breakfast. But while there are endless fun ways to make breakfast tacos, I almost always revert to some version of this basic combo – fried eggs, sautéed peppers and onions, breakfast sausage and lots of shredded cheese. This Friday, I headed out to my local Walmart to stock up on a few essentials for the weekend, including everything I needed to make this breakfast. I picked up Odom’s Tennessee Pride Country Sausage, in the refrigerated packaged deli section and the rest of the ingredients to make this comforting breakfast. I always buy Odom’s Tennessee Pride Country Sausage because it’s made with premium pork and has that Real Country flavor. Plus, with 9 g of protein per serving, it’s a great way to start the morning! Turn a regular breakfast into a hearty one!

Almost everyone makes breakfast tacos and I know that they aren’t a super special thing, but I have been dying to share my favorite version with you. I’ve also been semi-uninspired in the kitchen lately and struggling for new and exciting ideas. It comes and goes, and right now all my fun and delicious ideas are going… somewhere. Other than my brain. Anyhoo.

Sometimes simple recipes are best… and going back to the classics! My must haves include the fried eggs, sausage, peppers and onions, and a large handful of sharp cheddar cheese. They are so flavorful – I know you’ll love them!

Ingredients:

1 lb Package Odom’s Tennessee Pride Mild Sausage

6 flour tortillas

6 eggs

1 tablespoons vegetable oil

1 red pepper, chopped

1 yellow onion, chopped

1 cup shredded cheddar cheese

1 bunch of cilantro

Directions:

  1. Heat 1 Tbsp. oil in a medium skillet over medium. Cook sausage, breaking up with a wooden spoon and stirring occasionally, until brown and cooked through, about 5-8 minutes. Transfer sausage to a plate with a slotted spoon.
  2. Add yellow onion and red pepper to fat in skillet and cook, stirring occasionally, until softened, 6–8 minutes. Transfer to a plate.
  3. Make your eggs. I like fried eggs but you can do scrambled if you prefer.
  4. Assemble tacos with sausage, peppers and onions, fried eggs, cheese, and chopped cilantro all on the tortilla.
