Watermelon and Pineapple Salsa

Summer is finally here, and with that brings outdoor summer parties. I’m always looking for a quick and easy dish to serve, and during these hot summer months the less time I have to spend sitting over the stove the better. This salsa is loaded with fresh watermelon and pineapple with a balanced spiciness and sweetness from the jalapenos and sugar. Serve with corn chips or top it off on your favorite tacos. Either way, you’ll keep coming back for more!

Chopped watermelon, pineapple, cucumber, spicy jalapeño pepper, red onion, and cilantro is tossed together with lime juice for a sweet yet spicy salsa. Need a simple salsa, that packs a lot of flavor? This is your new recipe. So good, dare I say you can eat it with a spoon? With gorgeous blue skies and the 80+ degree weather, who wants to be stuck in the kitchen standing over the stove? Not me. Like I said earlier, whether you’re topping your tacos, or serving it as a dip for corn chips – you’ll keep coming back for more!

Ingredients: 
1 1/2 teaspoons lime zest (from about 1 lime)
1/4 cup fresh lime juice (from about 3 limes)
1 tablespoon sugar
3/4 Freshly ground pepper
3 cups seeded and finely chopped watermelon
1 cucumber, peeled, seeded and diced
1/2 fresh pineapple, diced
1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
1/4 cup fresh cilantro, finely chopped
1/2 teaspoon garlic salt

 

Directions: 

1. Stir together the lime zest, lime juice, sugar and 3/4 teaspoon ground pepper in a bowl. Add the watermelon, cucumber, pineapple, jalapeño, onion and cilantro and toss gently. Chill the salsa until ready to serve.

2. Add the garlic salt just before serving. Serve with tortilla chips.
