More often than not, the simplest meals are the best, especially when using healthy and fresh ingredients. After a weekend filled with too many slices of pizza, bites of sugary goodness and one too many cocktails, it feels good to get back on track. This Spinach Power Salad is filled with greens, protein and everything in between to keep you full all day long, even through that 4 o’clock slump. It makes a great healthy addition to your brown bag lunch and you’re guaranteed to feel energized and refreshed the rest of the afternoon. There’s nothing better than a simple salad that can be put together in no time, especially on those busy weekday mornings!
If you aren’t a fan of kale, leave it out and just use the spinach but I think the kale gives it a great crunch. I like it chop it up extra fine so you can’t even tell it’s in there… because let’s be honest does any one really LOVE kale? It’s just healthy, so we eat it! Top it off with bacon, fresh cheesy croutons, chopped hard boiled egg and pumpkin seeds, because it is Fall after all. It makes a great power lunch or dinner and I can tell already I’ll be having it a lot this season.
Ingredients:
5 ounces of baby spinach, chopped
5 ounces of baby kale, chopped
2 hard boiled eggs, chopped
1 cup mushrooms, chopped
6 slices of cooked bacon, chopped
1/2 cup pumpkin seeds
Triple cheese croutons for garnish
Favorite vinaigrette
Directions:
1. Place the first five ingredients into a large bowl and toss. Add seeds and croutons for garnish, and dress salad with favorite vinaigrette.
