Chances are you spent yesterday a little bit hung-over, eating greasy sandwiches/fries on the couch in your pajamas. No judgment here, I did a lot of ‘pop, fizz, clinking’ myself. It’s never too late to get back on track and this Pomegranate and Strawberry Salad is the perfect way to start. A big bowl of delicious greens, fruit and vegetables with a light vinaigrette is a realistic approach to a New Year healthy eating plan, plus I don’t really believe in diets or juice cleanses (I like to chew my nutrients). This is so delicious, it will feel fabulous to be eating the rainbow again!
