A mixture of whole grain rice, black beans, corn, creamy avocado, chopped tomato, bright orange pepper, sprinkled with fresh cilantro and a fresh squeeze of lime make this bowl packed with flavor and nutrition. I love this dish because everything can be prepped beforehand and assembled right before serving. It makes the dinner rush a little less hectic and a lot more enjoyable.
