Heirloom Tomato Salad

True life: I’m addicted to heirloom tomatoes! But seriously… I really am. I’ve been using them in everything lately, and this salad is my favorite way to eat them. This simple preparation brings out the best in seasonal produce and fresh herbs. A simple drizzle of olive oil and balsamic vinegar and some salt and pepper make the natural flavors shine.

As much as I love cooking, when it comes to summer recipes, I like to keep it really simple. That means using really fresh ingredients and keeping the recipe short and sweet. Salads are a fabulous option for the summer because they are typically served chilled and you don’t have to turn on the oven or stove to make them. I don’t know about you but sometimes the thought of putting the oven on in the summer makes me cringe. It’s way to hot for that!

Ingredients

  • Heirloom tomatos
  • Basil
  • Extra virgin olive oil
  • Balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Slice tomatoes and arrange them on a plate. Sprinkle with basil.
  2. Drizzle with olive oil, balsamic vinegar. Sprinkle with salt and pepper, if desired.
