Funfetti Granola Bars

Somehow, someway, sprinkles hopped into my bowl of oats! Is it just me or does adding sprinkles make almost everything taste better? Sprinkled with color and flavor these Funfetti Granola Bars are a lunch box favorite. Six ingredients and about five minutes of hands on time are all that’s required to make these tasty bars. If you’re a cake batter funfetti fan, you’ll love this recipe.

I’ve been making granola bars and granola for as long as I can remember just because that way I know exactly what I am eating. Not only that, it is so much more cost effective than purchasing bars from the store. These bars would be a great recipe to make with kids because everything is mixed up in one bowl, and mixing is really the only skill that is required. These are foolproof!

Ingredients: 

1/4 cup butter

1/2 cup honey

2 3/4 cups oats

3/4 cup white cake mix (I like to use  Miss Jones mix from Whole Foods) 

2 teaspoons vanilla

tablespoons colored sprinkles 

3/4 cup white chocolate chips

Directions: 

  1. Preheat oven to 325 degrees. Line an 8” square baking dish with parchment paper or foil and lightly coat with cooking spray. Set aside.
  2. In a microwaveable mixing bowl, combine the honey and butter. Microwave for 30 seconds. Stir a few times, until the butter is completely melted.
  3. Add in the oats, cake mix, vanilla and sprinkles. Stir until well combined.
  4. Pour the mixture into your baking pan and use the back of a spatula to make sure the mixture is pressed down firmly.
  5. Bake 20 to 22 minutes or until the edges are brown and golden. Remove from the oven and set aside to cool.
  6. Once cool, slice into bars. Melt the white chocolate and drizzle across the bars.
