Caramelized Browned Butter Rice Krispie Treats

Today I was feeling creative so I decided to make some of my girlfriends a little Galentine’s Day treat. These Caramelized Brown Butter Rice Krispie Treats are absurdly simple to make and super cute when formed into hearts and placed on lollipop sticks. Just because Galentine’s Day isn’t an “official” holiday doesn’t mean it’s not important (like *coughs* the most important). Truly, if you’re going to pick one “fake” holiday to get pumped about, it shouldn’t be National Pizza Day, Star Wars Day, or whatever else…it should be Galentine’s Day. And why is that, you ask? Because it’s all about lovin’ up on your ladies! 

Below I share how to make them into bars – which is more practical for year round. If you’d like to make them like I did, simply just use a cookie cutter to mold the rice krispies mixture once they are slightly cooled. I decorated mine with a light drizzle of melted white chocolate and sprinkles.

Ingredients:

  • 8 ounces butter, salted, plus extra for pan
  • 2 10 1/2-ounce bag marshmallows
  • 1 12-ounce box Rice Krispies cereal

Directions:

  1. Line rimmed sheet pan with parchment paper or wax paper, or butter it well.
  2. In a large pot, melt butter over medium-low heat. It will melt, then foam, then turn clear golden and finally start to turn brown and smell nutty. Watch closely and stir often.
  3. When butter is evenly browned, stir in marshmallows. (If using unsalted butter, stir in 1/8 teaspoon salt.) Melt and cook, stirring often, until mixture turns pale brown, then stir constantly until lightly browned but not dark, 3 to 5 minutes.
  4. Turn off heat, add cereal, and mix well, preferably with a silicone spoon or a spatula. Scrape into prepared pan and press down lightly. If necessary, butter hands to press mixture flat. Let cool, and cut into squares or bars.
