Bunny Ear Cupcakes

These charming, bunny ear cupcakes, are an oh-so adorable treat to make this spring. I can’t stop with all of the adorable Easter themed treats… so I apologize in advanced for the overflow of recipes. HOW CUTE ARE THESE? I love the little ears and think they would be a sweet addition to your brunch table.

To make things easier, I used store bought cake mix and frosting. If you want to make the cake and frosting from scratch go for it – then just follow the decorating instructions.


1 package Pillsbury Chocolate Premium Cake Mix

Additional ingredients to prepare cake mix per package instructions

2 containers Pillsbury Creamy Supreme® White Frosting

1 bag shredded coconut, sweetened

24 large marshmallows

Pink decorator sugar


  1. Prepare cake mix according to package instructions using water, oil and eggs to make 24 cupcakes. Cool completely.
  2. With a butter knife, frost cupcakes with a generous amount of frosting.
  3. Pour the shredded coconut into a bowl and lightly dip the frosted cupcakes into it until the buttercream is covered in the coconut.
  4. Cut each marshmallow in half diagonally into 2 pieces. Dip cut side of each piece into pink sugar to coat. Place on cupcakes, sugar side up, to resemble ears.
