This is one of the most mouth-watering breakfast sandwiches I’ve ever made and maybe the most addictive. Toasted herbed bread is layered with prosciutto, a crispy fried egg, arugula, tomato and topped with freshly grated parmesan cheese. Serve with a side of spicy breakfast potatoes for a breakfast that you’ll want to eat, well, all the time. This is one of my favorite dishes, that I’d call, OMG fab!
Sandwich:
Ingredients:
2 slices herb bread
2 slices prosciutto
1 egg
handful of arugula
1 tomato, sliced
Freshly grated parmesan cheese, optional
Directions:
1. Toast bread. Meanwhile heat a frying pan and add a small slice of butter or cooking spray. Fry egg, until desired doneness.
2. Place prosciutto on top of one slice of the toasted bread, add fried egg, handful of arugula, and sliced tomato. Sprinkle with parmesan cheese, salt and pepper.
Ingredients:
1 large russet potato
1 1/2 tsp Cajun seasoning
2 1/2 tablespoons butter
Directions:
1. Chop potato into large cubes. Sprinkle with Cajun seasoning.
2. Heat butter in frying pan on medium-high heat. Add potatoes and cook until tender, about 15-20 minutes.
