These charming, bunny ear cupcakes, are an oh-so adorable treat to make this spring. I can’t stop with all of the adorable Easter themed treats… so I apologize in advanced for the overflow of recipes. HOW CUTE ARE THESE? I love the little ears and think they would be a sweet addition to your brunch table.
To make things easier, I used store bought cake mix and frosting. If you want to make the cake and frosting from scratch go for it – then just follow the decorating instructions.
Ingredients:
1 package Pillsbury™ Chocolate Premium Cake Mix
Additional ingredients to prepare cake mix per package instructions
2 containers Pillsbury™ Creamy Supreme® White Frosting
1 bag shredded coconut, sweetened
24 large marshmallows
Pink decorator sugar
Directions:
- Prepare cake mix according to package instructions using water, oil and eggs to make 24 cupcakes. Cool completely.
- With a butter knife, frost cupcakes with a generous amount of frosting.
- Pour the shredded coconut into a bowl and lightly dip the frosted cupcakes into it until the buttercream is covered in the coconut.
- Cut each marshmallow in half diagonally into 2 pieces. Dip cut side of each piece into pink sugar to coat. Place on cupcakes, sugar side up, to resemble ears.
