Peanut Butter Granola

Guess what? Your mother was right: Breakfast really is the most important meal of the day. Weird how mothers are ALWAYS right. Bartlett’s Farm on Nantucket used to sell a version of this granola that I’d have almost daily. Whether I was topping yogurt or carrying a bag to Cisco Beach, that granola was always around. I’m not sure if they stopped selling it or some how I forgot about it but I decided to create my own yesterday when the craving hit. Vanilla Greek yogurt, Peanut Butter Granola, thinly sliced banana and a little drizzle of honey if you’re feeling extra adventurous makes an out of this world parfait that is OMG, delicious!

Ingredients:

1/2 cup creamy natural peanut butter

1/2 cup honey

1/4 cup canola oil

3 cups old-fashioned rolled oats

1 cup roasted peanuts

Bananas, yogurt and honey, for serving

 

Directions:

  1. Heat oven to 300° F.
  2. Combine the peanut butter, honey, and oil in a large bowl. Fold in the oats and peanuts. Transfer to a rimmed baking sheet.
  3. Bake, tossing every 10 minutes until golden, about 40 minutes. Let cool.
